These Keto Mini Pepper Nachos are a great way to enjoy the flavors of a plate of nachos on a crunchy pepper, with way less carbs than tortilla chips.

Mini Pepper Nachos

Nachos are one of my favorite snacks and I used to eat them for lunch all the time. When I started a keto diet and had to give up the corn chips, I just stopped eating nachos all together. Until I realized nachos don’t need corn chips to taste amazing.

Replacing the corn chips with mini peppers is a great way to continue to enjoy nachos, in a healthier, lower-carb way. These little mini pepper nachos are so tasty. They make a substantial lunch or a great appetizer for low-carb eaters.

What Peppers to Use For Pepper Nachos

I use mini sweet peppers in this recipe. They usually come in a pack of 5 or more and various colors. If you’re making a large amount of nachos, you can just buy a bunch of bags of peppers.

Mini Pepper Nachos

If you can’t find these little peppers, you can use bell peppers. Just cut off the top of the pepper, remove the seeds and ribs, and then cut the pepper into wide slices. You can get about 8 slices from a large bell pepper. If the peppers are smaller, then 6 slices might be the max. You still need surface space to put the nacho toppings, so don’t make them too small.

How to Make Mini Pepper Nachos

These nachos are very easy to make. Start by prepping all of the ingredients, then you can assemble them very quickly.

A note about the filling. You can really personalize this recipe for what you like. It doesn’t have to be the ingredients I used. For instance, this recipe uses seasoned ground beef. Here is a recipe for homemade taco seasoning that you can use, or just use a store-bought packet. Alternatively, you can use shredded beef or chicken, or leave the meat out all together.

Making Mini Pepper Nachos

You can use shredded cheddar, mozzarella, Monterey jack, or melted Velvetta cheese.

Then top with anything you like. I usually add:

  • Tomatoes
  • Avocado
  • Green onions
  • Jalapenos
  • Sour cream

Ingredients

  • 8 mini sweet peppers halved
  • 1/4 pound ground beef
  • 1 tablespoon taco seasoning
  • 1/2 cup shredded cheddar cheese
  • 1/2 tomato chopped
  • 1/2 avocado chopped
  • Salsa sour cream, fresh cilantro, if desired

Instructions

  • Preheat the oven to 375 degrees F (190 C). Prepare a baking sheet with parchment paper.
  • Cut the peppers in half and discard the seeds and ribs. Place the pepper halves on the baking sheet.
  • Brown the ground beef over medium high heat, crumbling as it cooks. Add the taco seasoning and simmer for 5 minutes. Remove from heat.
  • Divide the meat evenly among the peppers. Top with shredded cheese. Bake for 6 minutes.
  • Remove from the oven and top the nachos with tomato, avocado, and any other toppings you wish to add.

If you can’t find mini sweet peppers, use 2-3 bell peppers, cut into wedges.
