Ingredients

  • 4 chicken thighs boneless and skinless
  • 1/2 tablespoon (7 ml) olive oil
  • Salt and pepper for seasoning
  • 4 strips bacon
  • 4 cups (188 g) Romaine lettuce
  • 1 cup (149 g) cherry tomatoes halved
  • 1 large avocado sliced thinly
  • 2 thin slices red onion
  • 2 tablespoons (30 ml) honey
  • 2 tablespoons (30 ml) whole grain mustard
  • 2 tablespoons (30 ml) Dijon mustard
  • 2 tablespoons (30 ml) olive oil
  • 1 tablespoon (15 ml) Apple cider vinegar
  • 1 tablespoon (15 ml) water
  • 1 clove garlic minced

Instructions

  • Add olive oil to a skillet over medium-high heat. Season the chicken on both sides with salt and pepper. Sear it in the skillet for 4 minutes per side. Use a meat thermometer to ensure the chicken reaches an internal temperature of 165° F(75°C). Remove it from the pan and set aside to cool slightly. Then slice it into strips.
  • In the same skillet, fry the bacon until crispy. Chop it into small pieces.
