Ingredients
- 4 chicken thighs boneless and skinless
- 1/2 tablespoon (7 ml) olive oil
- Salt and pepper for seasoning
- 4 strips bacon
- 4 cups (188 g) Romaine lettuce
- 1 cup (149 g) cherry tomatoes halved
- 1 large avocado sliced thinly
- 2 thin slices red onion
- 2 tablespoons (30 ml) honey
- 2 tablespoons (30 ml) whole grain mustard
- 2 tablespoons (30 ml) Dijon mustard
- 2 tablespoons (30 ml) olive oil
- 1 tablespoon (15 ml) Apple cider vinegar
- 1 tablespoon (15 ml) water
- 1 clove garlic minced
Instructions
- Add olive oil to a skillet over medium-high heat. Season the chicken on both sides with salt and pepper. Sear it in the skillet for 4 minutes per side. Use a meat thermometer to ensure the chicken reaches an internal temperature of 165° F(75°C). Remove it from the pan and set aside to cool slightly. Then slice it into strips.
- In the same skillet, fry the bacon until crispy. Chop it into small pieces.
