Eggplant has never tasted so good, piled up with all the combo ingredients you love on pizza: sausage, mushroom, onion, bell pepper and lots of mozzarella cheese.
Slice the eggplant into 8 round slices (crossways, not lengthwise) about ¼ “ thick - a little less than 1cm. Sprinkle salt on the slices and let them sit for 5 minutes. Then pat them dry with a paper towel to remove the beads of water and excess salt.
Meanwhile, brown the sausage and mushroom in a skillet over medium-high heat. When almost cooked through, add the onion, bell pepper, salt and pepper. Cook an additional 2 minutes, then remove from heat.
Spread the pizza sauce onto the eggplant slices. Top with equal amounts of the sausage mixture and mozzarella cheese.
Bake for 15 minutes, until the cheese is bubbly on top.
