Ingredients

  • 1 pound (454 g) large shrimp peeled and deveined
  • 1 tablespoon (7 g) Cajun seasoning
  • 2 tablespoons (30 ml) olive oil
  • 8 cups (320 g) mixed salad greens
  • 1 red bell pepper chopped
  • 1/2 cup (82 g) corn kernels
  • 1/2 cup (80 g) red onion chopped
  • 1 cup (149 g) cherry tomatoes halved
  • Salt and pepper to taste

For the dressing:

  • 1/4 cup (56 g) mayonnaise
  • 1 teaspoon (2 g) Cajun seasoning
  • 3 tablespoons (44 ml) lime juice

Instructions

  • In a bowl, toss the shrimp with Cajun seasoning until evenly coated.
  • Heat the olive oil in a large skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes per side until pink and opaque. Remove from heat and set aside.
  • In a large salad bowl, combine the mixed salad greens, red bell pepper, corn, red onion, and cherry tomatoes.
  • In a small bowl, whisk together the ingredients for the dressing.
  • Arrange the salad evenly on the plates. Place the Cajun shrimp on top of the salad.
  • Drizzle the dressing over the salad. Season with salt and pepper to taste.
