Ingredients

  • 1 large delicata squash seeded and cut lengthwise
  • 1/2 tablespoon (7 ml) cooking oil
  • 1 tablespoon (14 g) butter
  • Salt and freshly ground black pepper to taste

Instructions

  • Slice the squash into 1/2-inch half moon shapes.
  • Heat the cooking oil in a skillet over medium high heat. Once hot, add the squash to pan and saute for about 2-3 minutes per side, until tender enough to pierce with a fork.
  • Add the butter to the pan and sauté the squash in the butter until lightly browned.
  • To serve, place the squash on a plate and pour the butter over the squash. Season with salt and pepper to taste.
