Ingredients

  • 1 cup mayonnaise full fat preferred
  • 1 cup Parmesan cheese grated
  • 1 clove garlic finely chopped
  • 14 ounce canned artichoke hearts in water drained and chopped
  • 1/2 cup spinach cooked and squeezed of liquid

Instructions

  • Preheat the oven to 350° F. Combine all ingredients in a casserole dish.
  • Bake uncovered 25 minutes or until browned and bubbly on top. Serve immediately with veggies or low-carb bread.

Notes

  • There are about 8 servings in this dip. Each serving has 2 net grams of carbs.
  • Don't use marinated or oil-packed artichoke hearts. The extra oil ruins the balance and makes the dip very greasy.
  • It's best to use freshly grated Parmesan cheese (don't use the kind in the green can that's not refrigerated.)
