Ingredients

  • 2 chicken breasts sliced into 2 thin pieces each
  • Salt and pepper for seasoning
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 3 cloves garlic minced
  • 1/2 cup chicken stock
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese
  • 1 teaspoon chili flakes
  • 1/4 teaspoon Italian seasoning
  • 1/3 cup sundried Tomatoes chopped
  • 1 tablespoon fresh basil leaves chopped

Instructions

  • Season the chicken with salt and pepper.
  • Heat the oil in a pan over medium high heat. When hot, add the chicken and brown for 3-4 minutes on each side. Remove from the pan and set aside.
  • Add the garlic to the pan and cook for just 30 seconds. Pour in the chicken stock. Deglaze the pan to remove any browned bits.
  • Turn the heat down to medium low. Add the heavy cream and Parmesan cheese. Simmer the sauce for a few minutes to thicken. Add the seasonings and sundried tomatoes. Return the chicken to the pan and simmer for 3-5 minutes to further thicken the sauce and warm the chicken.
  • Garnish with fresh basil and serve.
