Ingredients

  • 4 egg yolks
  • 2 tablespoons (28 g) butter
  • 3 tablespoons (44 ml) coconut oil
  • 1/4 cup (55 g) swerve brown sugar
  • 1 cup (85 g) unsweetened coconut flakes chopped
  • 1/4 cup (27 g) chopped pecans
  • 1/4 cup (29 g) chopped walnuts
  • 1/2 cup (90 g) sugar free chocolate chips

Instructions

  • Preheat oven to 350° F (175° C). Line a baking sheet with parchment paper or silicone mat.
  • In a mixing bowl combine egg yolks, butter, coconut oil, and sweetener until fully incorporated. Add the rest of the ingredients and mix well.
  • Place the cookie dough in the refrigerator for 1 hour to set. Once set, use a tablespoon or cookie scoop to make balls of dough. Press the balls to pack them and place them on the baking sheet. Using the back of a spoon and press them down a bit. Try to keep them packed as tightly as possible.
  • Bake for 10 minutes or until they start to brown. Let them sit on the baking sheet until they cool.

Notes

  • The biggest issue with these cookies is their ability to spread while baking. Refrigerate the dough for at least an hour before cooking. While one batch is baking put the raw dough back in the refrigerator to keep cold.
  • The cookies will lose some oil while cooking. It will reabsorb after baking and firm up. Leave them on the baking sheet until they have cooled down.
  • You can change these up in a number of ways. Change up the nuts, cut out the coconut, or add different flavors of chocolate chips. That is the great things about this cookie. It will taste great no matter what combination you use.
