This corned beef hash is a good substitute for regular corned beef hash with potatoes for when you're on a low-carb diet and are craving a classic.

Ingredients

  • 2 tablespoons butter
  • 1 head cauliflower cut into small pieces
  • 1/4 cup onion diced
  • 1/2 cup bell pepper diced
  • 6 ounces corned beef chopped
  • 2 tablespoons chopped fresh parsley
  • Salt and ground black pepper to taste

Instructions

  • Cut the cauliflower into bite size pieces and steam until tender, about 10 minutes.
  • Melt butter over medium heat in a large skillet. Add the onion and bell pepper and sauté until tender and translucent, about 10 minutes.
  • Add cauliflower and cook until it starts to brown.
  • Stir in the corned beef and cook until warmed through. Season with parsley, salt and pepper to taste.

Notes

  • You can leave the bell pepper or onion out if you want to cut down even more on carbs, but you'll want to replace them with another flavoring element - sliced green onion, garlic, extra spices.
  • You can replace the corned beef with pastrami or salt beef.
