Cut the cauliflower into bite size pieces and steam until tender, about 10 minutes.
Melt butter over medium heat in a large skillet. Add the onion and bell pepper and sauté until tender and translucent, about 10 minutes.
Add cauliflower and cook until it starts to brown.
Stir in the corned beef and cook until warmed through. Season with parsley, salt and pepper to taste.
Notes
You can leave the bell pepper or onion out if you want to cut down even more on carbs, but you'll want to replace them with another flavoring element - sliced green onion, garlic, extra spices.
