Chicken Lettuce Wraps

Use leftover chicken breast mixed with mayonnaise and spices to make Chicken Lettuce Wraps. A delicious, quick, and easy lunchtime meal.

Ingredients

  • 1 head butter lettuce leaves removed and washed
  • 8 ounces cooked chicken breast diced
  • 1 avocado cubed
  • 10 cherry tomatoes quartered
  • 1 tablespoon cilantro chopped
  • 3 tablespoon mayonnaise
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • Red pepper flakes optional

Instructions

  • Spread 8 lettuce leaves out on a plate.
  • Combine the chicken, avocado, tomatoes, cilantro, mayonnaise, salt and pepper in a bowl. Stir to coat.
  • Divide the chicken mixture evenly between 8 lettuce leaves. Sprinkle with red pepper flakes, if desired.

Notes

  • You can add crumbled bacon or shredded cheese to the lettuce wraps, if you like.
  • Chicken can be substituted with turkey, or with cubed halloumi cheese for a vegetarian wrap.
