  • 1/2 red bell pepper diced
  • 2 green onions chopped
  • 1 jalapeno pepper seeds removed, finely diced (optional)
  • 1 lime juiced
  • 4 cod filets about 5 ounces each
  • 1/2 teaspoon paprika
  • Salt and ground black pepper for seasoning

Instructions

  • Preheat the oven to 375° F. Line a baking sheet with parchment paper.
  • Combine the mango, red bell pepper, onions, jalapeno pepper, and lime juice in a bowl. Season with salt and pepper to taste. Allow to marinate while the fish cooks.
  • Season the cod with paprika, salt, and pepper on both sides. Set them on the baking sheet.
  • Bake for 20 minutes or until the fish registers 145° F on a meat thermometer.
  • Serve cod with mango salsa over the top.
