Ingredients

  • 3 firm-ripe peaches
  • 3 cups (90 g) baby spinach 5 oz
  • 1/4 cup (38 g) feta cheese crumbled
  • 1/4 cup (27 g) slivered almond
  • 1 tablespoon (5 g) mint leaves chopped

For the dressing:

  • 1/4 cup (59 ml) olive oil
  • 1 1/2 tablespoons (22 ml) apple cider vinegar
  • 1 tablespoon (15 ml) lemon juice
  • 1 teaspoon (5 ml) dijon mustard
  • 2 teaspoon (10 ml) honey
  • 1/4 teaspoon (1.5 g) salt
  • 1/8 teaspoon (0.25 g) black pepper

Instructions

  • Preheat the grill on medium.
  • Wash the peaches. Cut each peach into quarters removing the pit. Place peaches on the grill and grill for 4 minutes per side grilling both cut sides.
  • Place spinach on a platter and top with feta, slivered almonds, and mint. Add peaches to the top of the salad.
  • Mix together salad dressing ingredients. Drizzle over salad.

Notes

  • Don't put the dressing on the salad until you are ready to eat it or it will get soggy!
